The third vintage of our Große Reserve Extra Brut was allowed to take a long time to mature into what we believe is an outstanding sparkling wine. The Chardonnay grapes were harvested in the fall of 2017 after a rather cool vintage – perfect for a base sparkling wine with balanced acidity. Fermentation in steel tanks and malolactic fermentation were followed by twelve months of aging partly in new and partly in used wooden barrels. In the fall of 2018, the wine was then bottled according to the “Méthode Traditionelle” with yeast added to ferment for the second time. The bottles were then taken to our sparkling wine cellar in Gedersdorf, an old, cool, dark cellar tube where the sparkling wine could mature in absolute peace.

Matured for 42 months

To be considered a Große Reserve, the sparkling wine must be aged on its yeast for at least 36 months. We even allowed our sparkling wine to rest for another six months until we were satisfied with the result: A varietal Chardonnay sparkling wine with great elegance and cool but balanced fruit, juicy, creamy and with the finest perlage on the palate, definitely also with wood notes as well as a long finish. In short: a great sparkling wine for special occasions!
