Chardonnay-Sekt Große Reserve

We harvest the grapes for this Extra Brut sparkler from our Chardonnay in the vineyard Ried Tiefenthal. We do this at a very early stage of ripening, because we need crisp acidity and to keep the alcohol content under control (important for sparkling wine).
When pressing, we only use intact whole clusters, without prior destemming or crushing, and only the first batches of the pressing – the so-called heart.
The base wine is fermented partly in steel tanks and partly in large wooden casks.
In August or September, the wine is mixed with yeast according to the méthode traditionelle and bottled, then sealed with a crown cap. The bottles are then transferred to our sparkling wine cellar in Gedersdorf – an old, cool & dark cellar where the Sekt can mature in absolute peace. We give it at least three years for this.
Our Grosse Reserve Extra Brut is a fresh, lively Sekt with a delicate, fine nose. Despite its lightness on the palate, it is important to us that the wine has sufficient backbone – that it is complex on the palate, presenting a creamy texture and clearly displaying toasty notes of wood, culminating in a long finish.
2014 was our first sparkling wine vintage, with which we were very satisfied. And we weren’t the only ones who were extremely happy with the 2016 vintage: our Grosse Reserve Extra Brut received very good marks at every tasting and has been without exception ranked among the best sparkling wines in Austria. For the 2017 vintage, we took extra time – the sparkling wine was not only 36, but 42 months on the yeast. The result: A varietal Chardonnay sparkling wine with great elegance and cool but balanced fruit, juicy, creamy and with the finest perlage on the palate, certainly also with wood notes and a long finish. In a nutshell: a great sparkling wine for special moments!
